The Terroir of the Bodega
Sanlúcar’s wineries, locally known as bodegas, have a singular beauty and share a series of unique constructive features that provide the velo de flor the ideal conditions to thrive in. So, as Manzanilla ages in the cask, these native yeasts will form a protective layer and allow the wine to acquire its exceptionally unique nuances.

The Velo de Flor
Due to Sanlúcar’s geographic location and climate, the velo de flor (thin layer of yeast forming a film over the surface of the wine as it ages) has a composition all its own, making Manzanilla unlike any other wine: it’s particularly light and delicate, mildly saline and a subtle bitter finish.

The Grape: Palomino Fino
Manzanilla is made from the most widely grown grape variety in this winemaking region: Palomino Fino, a grape variety that produces a very pale but sweet and flavourful juice. Exceptionally well-suited to the local Albariza soil, Palomino Fino grows and ripens well
under the area’s favourable climate conditions.
